How does a chocolate preparation line work?

In chocolate production, raw materials are melted, mixed, refined and held at a set temperature until they are used. At every stage the product is heated by a double-walled water jacket rather than direct heat, so the chocolate does not burn and its structure is not damaged. Our machines are designed to work individually for each of these stages or as a connected line:

  1. Melting: Block margarine, cocoa butter and vegetable fats are melted in the melting tank and transferred to the pre-mixer by an integrated pump.
  2. Pre-mixing: The raw materials are mixed in the twin-agitator pre-mixing tank; a three-way valve recirculates the product and transfers it automatically to the ball mill.
  3. Refining: In the ball mixer, special steel balls refine the product and give it a smooth texture.
  4. Resting and storage: The refined chocolate is held at a constant temperature with gentle agitation in storage and stock tanks, preventing it from setting.

Key features

  • Heating: Double or triple-layer water jacket, resistance-supported precise temperature control and insulation that reduces heat loss.
  • Mixing: Agitator motors set by timer relay; angled anchors and special steel balls in the ball mixer.
  • Transfer: Automatic product transfer between machines with two-way outlet pumps and three-way valves.
  • Controls: PLC touch screen on the ball mixer for temperature, motor time and cooling; manual operation also possible.
  • Safety: Motor protection switches and emergency warning systems.

Honey and other sensitive products

The honey vacuum tank processes honey and similar products under vacuum and is equipped with a digital temperature display, safety valve, heat exchanger, sight glasses and a sampling point. A PLC screen, speed control and an aroma-recovery heat exchanger can be added on request. The laboratory ball mill is designed for R&D and quality control work on chocolate, compound chocolate, spreads and cream formulations.
